Ingredients
- 24 phyllo dough tart shells
4 Granny Smith apples, peeled, cored, and diced
1 lemon, juiced
2 T butter, unsalted
4 T brown sugar
1/2 c caramel ice cream topping
1/2 c whipped cream (optional--nutrition info NOT included)
Directions
Preheat oven to 375 degrees. Place tart shells on a baking tray. Combine lemon juice and apples in a mixing bowl. In a cast iron or heavy skillet, heat the butter until frothy. Add brown sugar and cook until dark in color; about 1-2 minutes. Add apples and toss. Transfer apples to the tart shells. Bake 6-7 minutes. Allow to cool slightly; top with sauce and whipped cream (optional--nutrition info NOT included).
To make your own tart shells:Spray 24 mini muffin cups with nonstick cooking spray. Remove phyllo dough from packaging. Slice into 1 inch strips then cut each strip into 2 inch segments. Using 3 layers at a time, fill the cups, spraying cooking spray between each layer. Repeat process three times.
Serving Size: two filled shells with 1 teaspoon caramel sauce.

I made them the other night. I swap out the phyllo pre made pie crust, which I rolled out and took a glass and cut circles and put into cupcake pans. I also added apple pie spice to the butter and sugar mixture . They came out great!!! Due to the swap with the crust had to bake for 30 mins. - 11/5/10

I made these tonight with a few changes for my own taste and they were amazing! I didn't use the caramel sauce because i'm not a fan so i added cinnamon, nutmeg, ginger, and vanilla. I also cut the brown sugar and used I Can't Believe It's Not Butter Spray. Cut the calories to 63 for two shells. =) - 10/27/11

I used parchment paper on the pan to avoid sticking.I also used "I can't believe it's not butter" spray-0 fat,0 calories, instead of butter. I chopped the apples, sprayed them, tossed with brown sugar and pie spices, put in shells and baked. This cut back on calories even more, & was still delish!!! - 4/3/11

My family does not have dessert very often, but I wanted to do something special for my 5 and 3 year old. They found them to be a little to tart but the rest of us loved them. I did add cinnamon. It made it real apple pie like. This recipe was so easy to make that I know I will make again. Yummy!! - 1/7/11
