If you don’t want to buy beef tenderloin or lump crab, you could make any cut of steak you want. And instead of crabmeat, try shrimp. Just prepare them the same way I do the crab but make sure they are cooked through.

How to cook the perfect
seared filet mignon.

I’ve really learned how to cook the perfect steak on the stove and it’s pretty easy. So here is how I make them.

  1. First let the meat set out for 30 minutes.
  2. Next heat up acast iron skilletto medium high heat.
  3. Add 1 tablespoon butter and 1 tablespoon olive oil to the skillet.
  4. Sprinkle salt and pepper on both sides of the filets.
  5. Sear the steaks on both sides, approximately 3-5 minutes depending on thickness of the meat. Try not to move them as they are searing.
  6. Place in a 425° F oven for 5-7 minutes.Again this will depend on the thickness of your steaks. A 2 inch thick steak takes about 7 minutes do be rare. This chart will help you figure the temperature for the level of doneness you want for your steak.
  7. Take out and let set for 5 -10 minutes before eating.

Making an easy Hollandaise sauce.

This is much easier than it sounds so don’t be intimidated. Hollandaise sauce is naturally low carb and 1 tablespoon has only 0.2g net carbs.

So this is how you make an easy hollandaise sauce.

  1. Melting 1 stick or 8 tablespoons butter in the microwave and let it cool a little.
  2. Meanwhile add 4 eggs yolks, 1 teaspoon of lemon juice, ⅛ teaspoon of cayenne and ½ teaspoon of salt to a blender and blend on low for a few seconds to combine.
  3. Make sure the butter is cool but still liquid. Turn the blender on low and very slowly pour the melted butter into the blender.
  4. When you have poured all the butter, turn up to high and blend for 30 seconds.
  5. Use immediately.

How to make this keto steak Oscar dinner in 30 minutes.

I am one to multi-task so I’m going to tell you how I made this low carb meal in 30 minutes.

  • Let your steaks sit out for 30 minutes to come to room temperature then you can start your timer and get to cooking!
  • Heat a cast iron skillet up to medium high then add the butter and oil. Meanwhile sprinkle salt and pepper over both sides of the filets. Place the filets in the skillet and let them sit there for 3-5 minutes to sear them. Then flip them over and sear the other side for about 3 minutes.
  • While the steak is searing, add the butter for the hollandaise to the microwave and cook for 1 minute or until melted then set aside to cool.
  • Once the steaks have been seared place the skillet into the oven for 5-7 minutes depending on the thickness of the steak and how you like it done.
  • While the steaks are in the oven, place the asparagus in the microwave and cook for 4 minutes. I use this microwave steamer for vegetables that works great.
  • Now get out a small skillet and add a little butter and lemon juice and mix well. Add the lump crabmeat and let it just heat up a bit then turn off the burner.
  • Once the filets come out of the oven let them sit for 5 minutes or so while you make the Hollandaise sauce.
  • Add the lemon juice, cayenne, salt and egg yolks to a blender. Blend for a couple seconds to combine. Then set the blender to low and slowly pour the cooled melted butter in to the blender. Once the butter is in, turn the blender up to high for 30 seconds to thicken.
  • Take your plates and lay a few stalks of asparagus down first. Then place a filet on top of them.
  • Next take a few spoonfuls of crab meat and neatly set atop the filets.
  • Lastly pour over the hollandaise sauce and you are done!

Helpful resources for
making this recipe.

I use the Certified Angus Beef® website often for tips on how to cook nice pieces of beef like this filet mignon. Their degree of doneness chart is very helpful for figuring out the right temperature for how you like your meat.

For instance for a medium rare steak you want an internal temperature of 135°F and for medium you want 145°F. They also tell you to remove the meat when the thermometer is 5°F lower then your desired donees temperature because as you rest the steaks the temperature will continue to rise. They have lots of tips like that.

Also when I made my first hollandaise sauce this article from the Kitchn was very helpful. It gives you a few tips if you are having problems with your sauce too.

While this keto steak Oscar is not a dish we will have very often because it’s not as budget friendly as we usually eat, I will be making this delicious steak recipe again. Maybe for my hubby’s birthday? It was truly a most delicious dinner and I think it would be perfect for your Valentine’s Day dinner if you are on a keto diet. Enjoy!

The hollandaise sauce makes about 12 tablespoons and 1 tablespoon has:
